a recipe for smoked salmon

A nice day with hints of Spring, but still in the fifties with a cool breeze. Great day to work on the boat, great day to smoke some salmon for dinner.

3 lbs organic farm-raised salmon
2 quarts water
1/2 cup salt
1/2 cup sugar
1/2 cup brown sugar

Mix the water, sugar and salt together and marinate the salmon for three hours.
Pat dry then add slices of lemon and jalapeno peppers.
Put on the smoker with 2/3 bowl of water and a couple chunks of wood.
Then......

finish the touch up paint on the hull, rudder and stock...

crank up the 3.5 two-stroke outboard for the first time this year ( a little carburetor cleaner will help it get going) ...

and finish little jobs like the new mount for the fire extinguisher up on the forward side of frame two under the foredeck.....

and about that time the smoked salmon will be ready to enjoy with a nice glass of wine.

Now just give me a few more degrees and we are ready to sail.

Combining cooking with touching up a boat joins two activities that create enormous expectation. It must have made for a sublime afternoon of delicious anticipation. Brilliant.

It was a great afternoon. And I've got leftover smoked salmon for some great salads.
